Fusilli alla Caprese

Hey yall! TGIF!!! So glad Friday is here! I've been at my scrappy desk working on an article and on some scrappy projects, but I wanted to take a minute to cook for the hubby and I before he has to go out to work. We have been craving some rotisserie chicken and I thought I'd whip up this new pasta salad to go along with it. Not only is it out of this world delectable, but you can munch on it for several days! I love recipes like this! That way I have a small snack in the house or it can go with any lunch/dinner. This is another recipe from Giada De Laurentiis...my favorite chef! I so should of been born Italian! LOL

Fusilli alla Caprese

Prep Time 10 min

Cook Time 10 min

Level: EASY

Serves: 4-8

Ingredients

1 pound fusilli pasta

3 Tablespoons Olive Oil

2 garlic cloves; minced

3 cups cherry tomatoes, quartered (about 1 and 1/2 pints)

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/2 cup packed fresh basil leaves, torn

8 ounces of fresh mozzarella, diced (about 1 1/4 cups)

Directions

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8-10 minutes. Drain pasta in a large bowl and reserve 1/2 cup of the cooking liquid.

In a medium skillet, heat the olive oil over medium heat. Add the garlic and saute' until fragrant, about 2 minutes. Add the tomatoes, salt, and pepper. As the tomatoes cook and soften, smash them with a fork. Continue to cook until the tomatoes make a chunky style sauce, about 4 minutes. Transfer the tomato sauce to the bowl with the pasta. Toss to combine. Add the basil leaves and mozzarella. Stir to combine. Add the reserved pasta water, 1/4 cup at a time, until the pasta is moist. Serve.

Card Creatin' Tuesday

Happy Tuesday!!! How are all of you fabulous crafters today? I hope you are enjoying a great week so far! I am so happy today because I finally got back to my scrappy studio and created some cards. I took like 5 days off because I just wasn't having any mojo. I didn't feel creative at all. But this morning I woke up refreshed and was ready go go! So, I decided to make a few cards for some challenges.

'Thanks'

This card is a 'window' card. I created this with the use of my Cricut Gypsy after watching THIS fabulous tutorial from 'She's A Sassylady.' I know I have mentioned it before, but I LOVE Sheila's tutorials! They really have helped me to learn so much about my Gypsy and help me to stay creating. You must hop on over and check out her tutorials if you are a new Gypsy owner like me.

For this card, I used only the 'Gypsy Wanderings' cartridge that comes pre-loaded on the Gypsy. I love this cartridge! It is so whimsical and just perfect for my tastes. I have used this 'Thanks' word cut several times. For this project, I did use 'new to me' cut from the cartridge...the owl. I jazzed her up a tad with some glitter glue, bling, and you know I had to add a little bow. Of course, my trusty Helmar Adhesives helped to bring the whole card together. Yall know how I adore my Helmar!

 I love the little flourish that all of the images on 'Gypsy Wanderings' has. It really adds to the cut.

 I popped my owl up using some Helmar Zap Dots.

 Next up, I decided to play along with our current challenge on the 'Gyspy Chat' section of the Cricut Community. You know I love these challenges! If you have a Gypsy, you MUST come on over and join us! There is an awesome prize up for grabs!!!! Go HERE if you are interested in that.

The specs of this weeks challenge are to:

1. Make ANY project using a cut that has LAYERS...that's it. Super simple!

For my card, I used several cuts that have layers. I cut my card base from the 'Wild Card' cartridge. It has a solid base and then a top layer that has a curly looking window for the card front. I then turned to a new cartridge that Mom and I picked up, 'Wall Decor' & More', and cut the rooster and the rooster border with that. Last, I layered the sentiment (Thanks) using the 'Mini Monograms' cartridge. I had so much fun making this card! I love roosters! I want some rooster dishes so bad to put out on  my table. I thought of my Aunt Kay when I made this card because she has some beautiful rooster pieces in her home. So I may just have to send this to her some time.

Just A Few Basic Halloween Cards...

Happy Sunday! I have a few, very simple Halloween cards to share with yall today. I was cleaning up my scrappy space the other day and realized I haven't done any stamping in a long while. So I decided that I needed to pull out a few of my Halloween stamps and use them. I wanted to make some basic Halloween cards to send out to our friends/family. So I used a pattern from 'Sheetload Full Of Cards' blogspot. I have had the templates for these for some time, but haven't used them. 'Sheetload of Cards' gives you a template/instructions to make a certain number of cards using minimal papers. For example, for the template I used, a maximum of 6 cards (basic A2 size) can be made using 2 sheets of patterned paper and 3 sheets of solid cardstock. If you would like to check out some of these, go HERE. All patterns can be downloaded at 4shared and those are HERE. I used the 'September 2008' template for my cards. Although this pattern makes 6 cards, I only made 4. I'll save the leftovers for later. Another great thing about using these patterns is that you have plenty of scraps leftover...these are great for decorating the inside of the card.

For this card, I did something I haven't done in a long time...heat embossing. I stamped the owl stamp with Versamark ink and sprinkled on some Tim Holtz Distressing Embossing Powder in 'Peeled Paint.' I love the texture this embossing powder leaves behind. It is so cool.

Heads Up My Fellow Gypsy Goddesses!!!!

Hey yall! Happy Thursday...well almost Happy Friday, LOL! I wanted to give you a heads up tonight. There is a NEW challenge posted on the Gypsy Chat section of the Cricut Message Board!!! Woot Woot!!! I LOVE these challenges! They really help me to not only put my Gypsy to good use, but learn so much. AND check out the prize for this challenge!!!!

My Other Passion: Cooking

Hey yall! Happy Hump Day! I am so glad mid week is here! Brandon has Thursday AND Friday off!!! Yay! We never get to spend 2 whole days together...well we do, but it is so rare! So I am so excited this evening! I wanted to hop online right quick and do a little blog post to share my other love in this life besides scrappin'....and that is cooking! I love to cook!!! I love to try all sorts of dishes from all over the world. I have to say I have one of the best little taste testers too, my hubby! He is always so sweet to be completely honest and tells me what he does and doesn't like about things that I cook. He usually is very gracious and loves the new dishes, but there have been a few he wasn't as crazy about. LOL. But for my birthday this year, I decided I would rather cook myself than go out to dinner. I knew I wanted to cook a gourmet meal. I am so addicted to 'Food Network' and 'The Cooking Channel.' During the weekdays, that is usually what my tv is tuned to while I clean, scrap, or just chill. Well, one day, my favorite chef (Giada De Laurentiis of 'Giada at Home' and 'Everyday Italian') made the most delicious looking thing called 'Eggplant Timbale.' Here is a picture of HER dish!!! Isn't it gorgeous?!!!

So I knew I had to try this. Brandon and I do not eat eggplant very much, but I have to say this was FABULOUS!!! The eggplant is sliced and grilled. It makes it so sweet tasting. If you think you do not like eggplant, you need to give this dish a go, because it may just change your mind. The whole idea of the dish is that it is a 'pie' almost, except you eat it for the main course instead of dessert. You create a 'eggplant shell' around a pasta mixture through the use of a spring form pan. I have to admit, I was a bit intimidated at first, but this really was so easy to prepare. It did take time, but it was so worth it! We both just adored it! I spent around $25 on the ingredients needed for the dish and I don't know about yall, but Brandon and I can rarely go out and eat for that. And for this, we have enough to have leftovers. The cheeses are the biggest expense. This has Pecorino Romano and Smoked Mozzarella in it. I paid about $10+ just for that. I did make 2 tiny changes to our meal. I left out the peas because I do not like them. And instead of using 1/4 cup of Marsala wine, I used chicken stock. We are not wine drinkers in my house and I just did not see the point of buying a whole bottle of wine for a dish that called for a 1/4 cup. I know I can keep it and cook with it later, but I don't have any other recipes that use it. But I was still very proud of how my dish turned out. It was very flavorful, definitely different from the everyday. Mine does not stand up as well as hers did, but I'm thinking I should of let it 'rest' longer than I did. So here is what mine looked like once placed on the serving platter:

 I used our George Foreman Grill to grill the eggplant slices. I sprinkled extra Pecorino Romano cheese on top as well.

The pasta mixture inside was just heavenly!!! YUM! We are big pasta eaters in my house! LOL

So, all in all, for a first try, I was very pleased with this dish. Brandon and I both plan on cooking it again in the future. Next time, I want to try regular mozzarella cheese and I will definitely let it 'set' longer so it doesn't fall apart as easy.

The Witch Is In

Hey guys! Happy Tuesday! I have a new project going up on the Helmar Blog today and I thought I'd share my project with you here too. If you'd like more details on how I made this, visit the Helmar blog HERE. For my post today, I created a little altered item...a 'witch broom' treat bag filled with a candy corn mixture. This was so easy and fun to create!!! I also made a little matching notecard to send out with it.

 This treatbag was made from a basic brown paper lunch bag, a wooden dowel, and some scrappy goodies.

 Can you see my candy corn mixture down inside?

 I added some copper colored craft wire to this project. It reminded me of the wire you see on those old fashioned brooms.

 I added a little tag to the 'broom handle.'

I hope you all have a fabulous day!!! I hope to celebrate my birthday a day late today. Unfortunately, I spent my whole birthday alone yesterday. :( Brandon had to go to Jersey. I tried to stay as peppy as I could, but I have to admit, it was a little sad/depressing. But I had so many emails, comments on my blog, and comments on my Facebook page from friends that it just brightened my day!!! So tonite, I am going to cook that gourmet dinner I told yall about last week. I am making a new dish called Eggplant Timbale. It is a recipe I found while watching The Cooking Channel. It is a recipe from Giada De Laurentis. I bought all top quality ingredients and splurged big time on the cheeses that go into it. I bet I spent $15 on the cheese alone! LOL. But I think it will be so worth it. I'm gonna take pix and share the recipe with you guys this week too. So stay tuned!

SFTIO DT Reveal #4

Mornin' Everyone! Happy Monday! I am in a GREAT mood today because it is my birthday!!!! Whoo Hoo! I can't believe I am 27!!! Only 3 more years to the big 3-0! Eeek! That thought scares me! LOL. But I am just thankful to be here and will enjoy life as it comes. Today I wanted to share my 4th DT Reveal from SFTIO (Scrapbooking From The Inside Out). This layout is entitled 'What's My Purpose In This Life?' All paper/embellies (with the exception of the butterfly, bling, and white alphas) are from the kit. I cut the butterfly out using my Cuttlebug. The bling are from Imaginisce...used my I-Rock Tool on those. The white alphas are from Harmonie. I started this page by designing cut butterflies in the background using my Gypsy. I cut them out first and put leftover pink patterned paper on the back. I also added some stickles to help them pop. I used my sewing machine to create the stitches in the corners of the layout. This layout features hidden journaling in the pocket in the lower right hand corner. Of course, pulled out my Helmar Adhesives to complete the page. I used Zap Dots to pop up my butterflies and chipboard. I used 450 Quick Dry to adhere the envelope and the Quick Fix Adhesive Runner for the rest. I found the picture that I used online and printed that out. Here is the page:

 I printed a poem out onto some vellum and folded it up to fit inside the pocket. The poem reads:

Who am I? And what is my purpose here?

What truths and values should I hold dear?

What is the reason for pain and strife?

What is my place in the scheme of life?

Many a soul must have pondered before,

The answers to these questions I explore.

Some believe only in things that they see,

I cannot comprehend such a futile reality.

If a life of self-indulgence is it; and death is the end,

Life’s purpose is something I cannot comprehend.

I trust that life must mean more than a daily ordeal,

An inner voice whispers to my spirit that God is real.

Like the wind, man cannot see their maker above,

But his works result in limitless goodness and love.

I marvel at the immensity of the stars in the sky,

I contemplate the complexity of the human eye.

I sit in wonder at the beauty of earth’s animals and flora,

I’m always amazed by the complexity of the sun’s aura.

I stand awe struck at the site of a forest of towering trees,

I muse at the complexity of natures interdependencies.

Mighty miracles happen! As surely as mankind breaths air,

I see, and feel, the proof of Heavenly Father almost everywhere.

As I sit down and solemnly pray, meditate, and ponder,

I know that one day soon I too will be in the life yonder.

I’ve felt the influence of God changing and refining me,

And his scriptures give me cause for hope in life eternally.

SFTIO DT Reveal #3

Hey guys! I have my 3rd SFTIO DT Reveal for you today. As you may know, this month at Scrapbooking From The Inside Out, we are scrapping about 'Purpose.' For this page, I decided to scrap about a 5 year plan I have for me and my husband. I felt that this would be a good thing to do and keep. Then, in about 5 years come back to the page and see if I have accomplished some of these goals. The page is entitled 'My Intentions.' All paper and embellishments (with the exception of the laces) were pulled from the October SFTIO Purpose Kit. The 'picture' on this layout was cut from a piece of Graphic 45 paper from the 'Steampunk Debutante' line.  The red clocks in the background are transparencies. The black clocks on top are metal...loved those. I also used a Martha Stewart border punch in the background of the photo. I turned up the edges of the punched portion a bit. I used the Helmar Quick Fix Adhesive Runner for the majority of the page. The transparencies were adhered using the Vellum Adhesive from Helmar. I used Helmar Liquid Scrap Dots for the clocks and the roses and I used Helmar 450 Quick Dry for my layers of ribbon/lace under the photo. Here is my layout:

SFTIO DT Reveal #2

Hey guys! Happy Saturday! I hope you are enjoying a wonderful, relaxing weekend. I wanted to take a minute to blog this morning to share my SFTIO DT Reveal #2. For this project, I decided to create an altered project: a wall hanging to go in my scrappy studio. This wall hanging features paper from the Graphic 45 'Steampunk Debutante' line. It is really funky and I like it! It's definitely different from the papers that I normally would of scrapped with, but as I worked with them, I found I love the edge they have to them. They really make you take a second glance. Every detail in the patterned paper just is so interesting. Loved it!

This wall hanging is 12x12. I started with a piece of Graphic 45 paper and did a lot of cutwork to it. I also brought in some misting using Tattered Angels Glimmer Mist and Tim Holtz masks. They are the clocks you can see in the background. All embellishments were pulled from the October SFTIO 'Purpose' kit, except the black alphas. Those are from my own scrappy stash and are from American Crafts. I adhered all of this down onto a sturdy piece of 12x12 chipboard. I also added in some black trim to the edges, pearl ribbon for the hanger, and some stitching. I used Helmar 450 Quick Dry for the black trim, Helmar Liquid Scrap Dots for the flower and chipboard, and Helmar Zap Dots to pop up the wings on the lady and the butterflies. My trusty Helmar Adhesives really came to this rescue for this project. Here is my wall hanging:

"Live With Purpose"

 I cut the word 'live' out using my Cricut and Home Accents cartridge. The alphas on the chipboard are Cosmo Cricket.

 Can you see the wooden accents on the chipboard frame? They remind me of Bingo pieces. I loved those! They are in the kit too!

 Up close of some of the embellies and stitching...

 I love the lady that is from a piece of Graphic 45 patterned paper. She is so Victorian looking....right up my alley! I cut her out using my craft knife. I popped up the wings and curled the edges.

 On the frame of butterflies, I used my craft knife to cut the wings of the 4 butterflies in the corners. I then used Zap Dots to pop those up.

 Love these flowers in the kit! The feathers really make them pop for me.

This Month At SFTIO: Purpose

Hey yall! Happy October!!! Can you believe it's October?! Man, time flies! But I am sooo happy that October is here! I love this time of year! The weather is perfect for me and I love to decorate my home for fall. I hope to get started on that this next week. My house needs a major cleaning beforehand. But in the meantime, it is the 1st and that means a new kit is being debuted at SFTIO (Scrapbooking From The Inside Out)!!! Each month the kit is based around a different emotion. This month's emotion...Purpose. This kit is filled with goodies from Graphic 45, Crate Paper, Kaisercraft, Tim Holtz, BasicGrey, Melissa Francis, Cosmo Cricket, 7 Gypsies, and much more! The kit this month definitely has a girly type feel to it...right up my alley! Here is a pic of the whole kit for ya to see:

 Now, we were assigned to create 4 projects using the kit this month. I will share my first project today and the next 3 over the next 3 days. For my first page, I decided to scrap about being a wife. I know in my heart that being Brandon's wife is my calling in this life. He is my soul mate and I cherish him everyday. I truly believe it was fate that we were brought together. This page is entitled 'Kismet.' All papers, except cardstock, were pulled from the SFTIO Kit. I brought in alphas from my own scrappy stash. Those are from American Crafts. I also did a bit of stitching on this page and added more texture through the use of a Martha Stewart border punch. Of course, had to pull out my favorite Helmar Adhesives to complete the page. I used the Quick Fix Adhesive Runner for the majority of the page and popped up my clock chipboard pieces, flowers, buttons, and ribbon bow with the Liquid Scrap Dots. I also popped up the dress form using Zap Dots and adhered the ribbon down with 450 Quick Dry Adhesive. Here is my page....

 The dress form was cut from a piece of Graphic 45 Patterned Paper. All Graphic 45 is from the 'Steampunk Debutante' line. I am not sure if you can see it, but I added a green button to the waist of the dress form. This was in the kit and remind me of a bow. Also, love the flowers in this kit! They are so yummy! They even include a feather!!!

 I added some twine to the centers of the chipboard clocks.

 The pink ruffles were also cut from a piece of patterned paper. This pink paper is from Crate Paper. I turned up the edges of the ruffles for some added dimension.
